“It’s Gluten-Free, But You’d Never Know It!”

Holly Ross, a retired teacher from Flatwoods, Ky, started baking Gluten-Free goodies 12 years ago when she was diagnosed with Celiac Disease. She made the lifestyle change when gluten-free items were hitting the market, and she quickly realized this lifestyle change would be an expensive one. “I found myself spending a fortune on gross food.” Ross shared.
So, she began experimenting with recipes on the foods she loved like breads, cookies, pastries, pasta and so many more that she loved and could no longer have. She was always cooking for her family and friends, and they were trying her foods so she could perfect her recipes, Ross says, “If I'm cooking it, I want to be able to eat it.” Her friends and family loved her alternative recipes so much, “They could not believe they were Gluten-Free.” Rose explained. Ross says that she would have them come over for dinner and see her eating things like pasta, cakes, bread and all the things that she could no longer safely eat, and they were all shocked to learn that not only could she eat it but that it was gluten free and tasted great. Ross shared that they would often say things like, “You’re eating this too? There is no way it is Gluten-Free?!”
When she retired from teaching locally, she thought she would begin teaching at the university level, but COVID changed her plans. Her daughter convinced her to start selling her items and open a bakery that offered all her gluten free goodies so others might enjoy them too. Ross was skeptical about opening a store front, so she began cooking from her home and setting up at farmers markets. Most farmers market she set up at were open until 2 p.m., and she was always selling out by noon. She then realized this could be something more.
Ross opened her bakery store front in 2022, located at 2538 Ky-5 Ashland, Ky 41102, with the goal to be in stores and restaurants. Soon word spread about her delicious goodies, and she became a favorite among those who needed to eat gluten free.
